Bean and tomato salsa

What you will need
Salsa
1 can red kidney beans
1 can baked beans
150g Blanched green beans
1/2 cup diced cucumber
1/2 cup diced bell peppers (red, yellow, green)
1/4 chopped red onions
1 fresh tomato, deseeded and diced
1 spring onion sliced diagonally
Salt and pepper to taste
For the vinaigrette
10 ml white vinegar
10 ml lemon juice
30 ml olive oil
1 tbsp mixed herbs
Salt and pepper
Method
Wash all the tinned pulses and thoroughly strain them.
Then mix the beans, cucumber, peppers, tomatoes and onions
Add the dressing and season to taste.
This is a very easy salad that you can prepare an hour or 2 beforehand.
